This was super easy and super yummy.


season with season salt and cayenne pepper

Pour vegetable oil in skillet.

Brown chicken on both sides.

Place chicken in crockpot

Pour sauce over chicken

Add water to sauce jar and shake.

Pour the water in to crock pot.

stir all ingredients

Press the meat button and cook for 35 minutes

Breakfast wraps

How did I come up with this idea?

I wanted a breakfast that was yummy and healthy (ish) that I could freeze.

So I said to myself “self what about a sweet breakfast wrap”

and self responded “go for it”.

So I did.

I wrapped each of them in wax paper and then put them in the freezer.

I put them in the microwave or air fryer when I was ready to eat them.

So yummy.

These also make great snacks.

Ingredients: flour tortilla, cream cheese, hazel nut spread, blueberries, strawberries, granola, peanut butter, pecan, coconut, dried cranberries .

Salads made from soup packets

Okay so I am a little frugal. Okay maybe a lot.

A few months ago, an El Rancho grocery store opened up close to my home.

Of course I had to go see what they had.

One of the things that I found were these soup packets for $4.95.

I was like “hey, that’s a lot of veggies”.

I can do a lot with that.

So I did.

Delicious Salads

I can eat salads everyday all day. But I don’t .

I made these salads with ingredients from my local Aldi.

All of these salads where made with 1 pack of spring mix.

These salads were made on different days during the week.

The salad dressings are from Aldi also but are seasonal items.

The bacon was cooked in the air fryer on 300 for 20 minutes.

The eggs were also cooked in the air fryer (yes mind blown) on 250 for 20 minutes.

Vegan Breakfast Sandwiches

Every now and then, I give up meat and dairy.

Sometimes it’s a week.

Sometimes its a few months.

Here is one of the breakfast sandwiches I make.

As usual, it is simple and easy.

Silicone baking pan was purchased from Michael’s craft store.

“Just egg” is a plant based egg substitute that is made from mung beans.

It taste like eggs and can be found at Kroger, Whole foods and ordered from Amazon.

At the time, my local Aldi sold it. It is not a regular item there.

Directions for the “Just egg”: shake bottle, pour into pan, add chopped peppers, add seasoning of choice, bake until done.

Sandwich Skinnys are a low carb bread that I love. It is available at Aldi.

Note: Do not put in toaster. They are thin and will get stuck.
